At the mouth of the Pizherma River, on the northern shore of Lake Nero, a nameless Meryan settlement emerged. In the 9th century, it was destined to become an outpost of Novgorod's Slavic expansion into the Rostov region and evolve into the Slavic city of Rostov, first mentioned in the Tale of Bygone Years under the year 862. Although there is no archaeological confirmation of this chronicle date, it is from this date that the official age of Rostov is calculated. Between the 1660s and 1690s, the grand complex of the bishop's residence—the Rostov Kremlin—was built according to Jonah's design. Adjoining Cathedral Square to the north is the heart of ancient Rostov, and the Assumption Cathedral standing there served as the burial vault for Rostov princes and bishops until 1776. The legendary Prince Vasilko, the first Rostov Archbishop Feodor, Metropolitan Jonah III Sysoevich, and his successor, Metropolitan Joasaph, were buried here. At that time, Rostov boasted over forty different crafts. As early as the early 17th century, the famous "Sbor" (Gathering) fair emerged in Rostov, which by the 18th century had become one of the largest in Russia and defined the city's lifestyle for nearly three centuries. Modern Rostov is a thriving tourist destination. Extensive improvement work is currently underway in the city, with a particular focus on the central area, which is the main tourist attraction. A constantly expanding network of hotels, restaurants, and cafes ensures that a large number of guests are always welcomed with warmth and hospitality. Rostov's unique panorama, created over centuries, its architectural monuments, and the inexplicable aura of these ancient sites make the city extraordinarily attractive. Anyone who has visited here once will certainly return or dream of another encounter with Rostov the Great.

Food, Gastronomy, and Terroir
Local residents maintain households and farms, engage in gardening, fishing, and hunting. Therefore, Rostov the Great's restaurants invite guests to sample dishes made with local produce: pike cutlets, goat and sheep cheeses, homemade pickles, jams, and berry fruit drinks. Rostov onions have been famous since the time of the fair, which was held annually from April to October and rivaled that of Nizhny Novgorod.
Gastronomic Festival "Lukova Yarmonka"
Onions are one of the main culinary brands of Rostov. Rostov residents have long been renowned in Rus' as the "best gardeners," and the local harvest is celebrated according to ancient folk traditions. The "father onion" is the most frequent guest in the Russian garden and on the Russian table. The Lukova Yarmonka festival features tastings of a variety of onion dishes: onion flatbreads, onion soup rivaling French onion soup, and even onion jam! Guests can enjoy fairground festivities, interactive activities for children and adults, including making onion braids and wreaths, and learning how to make onion souvenirs. No one cries over onions at this festival!
All-Russian Gastronomic Festival and Competition "The Great Rostov Ukha"
Rostov ukha is a culinary delicacy. It is prepared using a special recipe from local fish, and an annual festival is even held (May-June). The festival features not only songs and dances, but also a culinary competition to prepare the best ukha. Participating teams compete in the recipe for the traditional Russian dish, ukha, as well as in the mastery of its presentation and serving. The highlight of the holiday is the fish soup prepared in a 300-liter cauldron by the chef of the Shchuchiy Dvor People's Academy of Fish Soup.
